Vietnamese Grilled Pork Patties / Cách làm Nem Nướng ngon không bị khô

Ingredients:
2 lbs. Ground Pork
2 tbsp Fish Sauce
2 tsp Mushroom Seasoning
2 tsp Tapioca Powder
1 tbsp Ground Pepper
4 tbsp Sugar
1 tbsp Vegetable Oil
4 Stalks Lemongrass
4 Cloves Garlic
4 Small Shallots

Directions:
Marinate Ground Pork with all seasoning above with purée lemongrass, garlic, & shallots. Mix well. Use a stand mixer for 5 minutes, adding 2 tbsp of iced water. Put into a tray and freeze for 30 minutes. Remove and mix again in stand mixer for another 5 minutes. Place back in freezer for another 30 minutes. Remove from freezer and grill. Flip every 2-3 minutes, for 30-40 minutes.

Eat Nem Nuong with fine rice vermicelli, lettuce, mints, eggrolls, roasted pork, rolled in rice paper. Dip in prepared fish sauce (2 tbsp fish sauce, 3 tbsp sugar, 6 tbsp water, 1 tsp chili paste, mix well.)
