STEAMED MANDARIN DUCK BUNS RECIPES
Milk : Room temperature. If milk is cold the dough will not rise.
Self-rising flour : 1 cup
All-purpose flour : 1 cup
Sugar : 1 TSP
Salt : seasoning
Eggs : 3 pcs (boiled)
Duck breast : 1 fillet
Minced pork : 1 small bowl
Leek : 30gr
White cabbage : ⅓ pc
Ginger : 1 small pc
Chives : 15gr
Carrot : ½ pc
Pepper : pinch
Mandarin : 3 large pc
Coriander seeds : Mixed herbs
Star anise: Mixed herbs
Girofle : Mixed herbs
Ginger : Mixed herbs
Make the Dough:
Mix 1 cup of all-purpose flour and 1 cup of self-rising flour, 1 tbsp of sugar, a pinch of salt, mix, one cup of room temperature milk. (if you use cold milk the dough will not rise) knead until your dough is soft and smooth. let it rest for 30 minutes.
Drop eggs in boiled water for 6 minutes and put them straight into ice water. This prevents the eggs from cooking further and makes your egg yolk runny.
Meat and filling preparation:
Remove the skin of duck breast, beat the meat with knives until you have a very soft texture. Chop the leek, ginger, chives, carrot, coriander, white cabbage, onion and seasoning, minced pork, fish sauce and soy sauce into the same bowl.
Make Mandarin Sauce:
Add sugar and wait until it is brown, add star anise, ginger, coriander seeds, girofle clove and then rice vinegar, after all rice vinegar is evaporated add 3 peeled mandarin and cook until the liquid is reduced. Use any type of strain to Remove the seeds. Add this sauce to your meat vegetable bowl and mix. keep it in the fridge.
Place a cling film on the table, put a spoon of your mixed duck meat on cling film and roll until it is flat, dip the boiled egg in flour, place the egg in the middle of rolled meat and close the cling film and twist until you have a meatball with an egg inside. Leave no air inside, Take a fistful of dough and roll it into banh bao dough size, Place your meatball in the middle of your banh bao bread and close it and cut the extra part of the dough. Your buns are ready to cook.
Steam cook your duck buns for 30 minutes. Once the buns rise, they are cooked. Plate and enjoy.
